We all know that being home for winter break can tend to get pretty boring once you are used to constantly having something to do while at school. Today I decided to take my boredom out on my family's new kitchen and make some delicious chicken fajitas for dinner!
Ever since I started living in my own apartment at school, I have been experimenting with different recipes everyday. But, cooking good and healthy foods is hard to do while on a college budget. This chicken fajita recipe is simple and only set me back $15 (given that my mom paid for it, one of the perks of being home :) ) and it cooked six servings.

I already had all the seasonings needed for the recipe, so I really only needed to spend money on all the produce and chicken that it called for. I started out by making the marinade and soaking the chicken in it. I left the chicken in the marinade for six hours which is more time than the recipe called for but I think it made the chicken much more flavorful!

Six hours later, I chopped up the peppers and onions, sautéed them in a skillet and then added the chicken! Served them on a fajita tortilla, and ate one too many fajitas because they were just so good.

These kinds of recipes that call for multiple servings are so great for a college budget, because not only do they come out to be about $3 per serving, but they are also healthy!
